Interplay of bitterness and MSG

Ingredients

Description

  1. Allow a cup of coffee to go cold.

  2. Taste it and note its levels of bitterness.

  3. Add a pinch of MSG and stir it to ensure it's fully dissolved.

  4. Taste it again. It should taste noticeably less bitter.

This experiment was first proposed by Anna and David Kasabian.

Verdict: MSG reduces the influence of bitter flavours.
